I personally do not eat from food carts very often, so like you said I would not have a food cart to eat from on a regular bases. Generally you have about 4 hours where food like meats can stay unrefrigerated and still be safe to eat. I personally would avoid street vendors unless you have been eating their on a regular bases. Generally if they keep the meats iced down properly, while waiting to be cooked, it will stay safe for a longer period of time. Look at the operation carefully : A. Do they wash their hands other than wiping their hands on a dirty towel? B. Are they handling the raw meats with their unwashed hands? C.
