When I was on the ships out of Uk we had two names for them...."Stornoway steaks" and one eyed bastards, the best ones I had were smoked using old whisky barrel shavings that drifted up to the top of the kiln, Its a wonder the curers were'nt pissed by the time the smoking was completed. I read somewhere that the Queen Vic had them on for breakfast....hope its true as i am staying there for a holiday in March next year been absent from L O S for too long
