I really loved eating Thai food while I was on my first trip to Thailand in June.  I liked adding the thai peppers from the small container they set on the table.  You know the one with thai peppers in one container, suger, dry peppers and something else in the other containers. My question is:  What is the liquid in the thai pepper container?  I just bought some thai peppers and cut them up. But, they are not the same.  Is it oil or just plain water in those condiment containers?

The liquid is nam-pla ( salty rotten fish sauce ) vinegar, little sugar, water. Try my homepage, there are plenty of thai recipe page.

Gabor is right.

If you can`t be bothered with making the liquid yourself, just do what I did before my thai girl moved in with me.

Go to your local thai restaurant and have them make you a bottle with this stuff and say you`ll pick it up later / the next day. Most places will do that and you can be sure that it will be good. Just taste it first ;)
