When catering as many nationalities as PBG does, it is necessary to have a large menu. In Pete's earlier respond to this topic, he did tell why kitchen/service had problems. Cutting down items on menu would only "help" by loosing few customers, who came to eat their favorite portion of food and found it has been removed from menu. Problems were high season related and i am sure they will be fixed before next one arrives.

I've never got sick from street food in Pattaya, sadly can't say the same about restaurants. My theory why street food may actually be less risky is that most of the flesh sold on stick were alive less than 24h ago. Many restaurants get their proteins from second or third hand after butcher (wholesale business, shop and delivery). Cold chain may broke at some point. Also restaurants don't order proteins daily, so it is not as fresh as street food. I don't like to eat beef in Thailand, unless it's imported. Thais don't hang their beef, so it can be very chewy.
