During a chat in FLB I mentioned that the hotel I was in was issuing Induction Cooking to long stay residents. The reason is that it is not a fire hazard like gas or electric stoves and according to one article I read can heat food twice as fast as electric.

Yes, it's more efficient & safer. You cannot however use non-ferrite materials, i.e. Aluminum pots won't work.

BTW, Induction stoves are also Electric, but the heat transfer method of the old stoves is Conduction, much less efficient & more dangerous.

I used an induction oven a couple of times... got decent results with meats and stews but never had much success with baking. One of my best purchases since moving to Pattaya was my electric oven from Makro for around 3800 baht...
