Gabor's den: Eastern smoked pork

It is easter time so must to eat smoked meat and eggs with the traditional garnishes. My choice was the half kilo boneless smoked and cooked pork knuckle. Yes I know, many gourmets would choose other parts of the pork, less fatty, no skins etc. but I like especially this part of the pork. The pork on my plate was almost perfect, as I like it... thin fat, trembly skin, juicy and tender meat. However I had a big battle with the chef, he wanted to serve the knuckle thin sliced as the chefs in the cilivized world serve a food like this. I denied it and I had several reasons... I like it in this neandhertal style, beacuse we may serve it as we want but it is a peasant food and have to eat accordingly... Hm... and my other reason was simple practical, I knew I can’t eat it it all, so I wanted the rest in a doggy bag and the thin slices very soon lose the juiciness, it become dry.

The boiled eggs were a big disappointment. Ok, I know the tradition says only boiled eggs... but anyway... probably only an extra 4 minute work to create some devils eggs. I see it as the laziness or the unimaginative attitude of the chef. ( Well I saw some signs of a heavy hangover following a long night on the chef )

Ok, I know, the traditon says only radish ( BTW NOT beer radish, but spring radish ) some spring onions would made better the meal.

The mustard was Ok, imported as i like it, not the usual english or french mustard, which are more bitter and more spicy... and not the usual sourish flavor I like... ( OK, this is only my own problem, I socialized in Hungary... ) I can tell the same about the horseradish, as I like it in vinegar. Both of them were canned, not home made.

My major problem with this meal was the bun... The cream cheese was Ok, good quality... but the bun was hard and dry. Probably the chef was again lazy to find a high quality bakery, just bought it in the next Tops express... Ok... I know, hard to find good quality bakery products in Thailand, but walking a few metres more, there is the Foodland, where the chef could find much better quality bakery.

Verdict: Good, but far from the perfect. The smoked, cooked knuckle was simple the excellence, true the visual look was like dogfood... but it was my own fault. Anyway, not a big deal, it was a smoked item the chef bought ready... But I appreciate the trick, he cooked it one more hour to be perfect. I missed the spirit of the food...the chef just „ vomited „ all the ingredients on the plate.. Just a peasant food plate... But tasty...
