I am a spicy food lover. I've eaten it all my life. I do however, over do it sometimes. Just as come cooks that know me, try to see what my limit it. What works best for the spicy burn in pineapple. It has enzymes in it that break down the oil that is coating your mouth with hot. Because it's an oil, that's why water doesn't work. Milk will put a thin coating over the oil and help some, but doesn't take it away. Bread will soak up a bit of the oil. But pineapple will break the oil down, and make the hot go away.

I've just watched the Nicholas Cage film "Bangkok Dangerous". In it he takes the edge off a hot thai curry by chewing the leaves of a plant. What is this plant? I've never heard of it before.

 

All of the Above is correct. By your description, yet another reason to think this was a terrible film.

 

I never got that far in that horrible movie, but there isn't such "a leaf" or magic cooler in real life. For Thais, it's rice first and foremost, pineapple or cucumber, but any leaves or raw veggie that are nearby like basil, mint, pak chee farang, cabbage, long beans, lettuce.... These are more or less commonly on a table during a meal.

Yes my missus is myopic when she adds the chilli to the Laab.....

The veggies and various greenery are there for a reason.
