I quite often enjoy a "full English breakfast" when visiting Pattaya.

I like the sausages they contain and I am wondering which spice(s) it is the English butchers are using that Danish or German butchers (or sausage factories) are not?

Salt and pepper are standard I think. The one I am noticing is probably sage.

Cumberland use a little sage and thyme,salt and lots of black pepper. Lincolnshire are dominated by sage.

I was mostly thinking of the sausages (bangers?) served with breakfast.

Nutmeg,mace,thyme,salt,lots of black pepper are standard maybe sage as well.ginger powder, cayenne are used as is all spice.

The proper Cumberland Sausage from a butcher isn't straight, it comes as a ring, just like a proper Bury black pudding....
