What is the spice(s)?

Recommended Posts

I quite often enjoy a "full English breakfast" when visiting Pattaya.

I like the sausages they contain and I am wondering which spice(s) it is the English butchers are using that Danish or German butchers (or sausage factories) are not?

Cumberland use a little sage and thyme, salt and lots of black pepper. Lincolnshire are dominated by sage.

The proper Cumberland Sausage from a butcher isn't straight, it comes as a ring, just like a proper Bury black pudding....
