The heat in Mexican food comes from oils in the peppers they use and water doesn't help anywhere near as much as something like whole milk, cream (which nobody seems to sell in Thailand), yogurt not made with skim milk, sour cream, butter, or anything with oil in it to dissolve and remove the offending substances.

I love Chili ,the hotter the better,but I have a small foible,I like mashed potato with my chili rather than rice.

Thickly buttered baguette........

I also made a pot of chilli yesterday.

 

Portion 1 is in the fridge for today.

 

Portions 2 and 3 are in the freezer, the flavour seems to improve after a week or two !

 

Tonight's meal will be served with plain boiled rice and a garlic baguette, yummy !

Always makes me laugh when i see the clowns that try the "ghost" pepper on you tube who don't realise this and they have gallons of water on standby
