chilli side dish with every meal

Hi folk, in a thai restaurant, you usually get a small side saucer with chopped up chillis ,garlic and coriander sometimes, in some sort of vinegar, with every meal. Does anyone know what it is and how to make it please?

Hi, I think you are talking about "Prik Nam Pla" Basically what you said, no set recipe as such as the exact ingredients will vary from chef to chef. Typically though: lime juice, birds eye chillies, brown sugar, minced garlic, but not in vinegar, it is mixed in Thai fish sauce.

Hmm, I always kept it simple, chopped up chillies in fish sauce.

 

Got to have the garlic and lime for me.

 

 

It must be bad for us?

Here at home, I mix lime juice, brown sugar, chili, garlic and soy sauce. Have started using dried, crushed chilies instead of fresh because it's more convenient.

 

Not what the OP wanted, just saying.

Good replies so far but I'm wondering if you are you referring to the red chillies in the clear vinegar that is somewhat sweet?

 

There are usually four containers on a tray.

Green chillies in fish sauce

Sugar

Dry, ground red chillies

Pickled chilies?

Darn, Nid was using Squid Sauce instead of Fish Sauce. Still, it tasted alright.

If she was using this bottle, it's actually fish sauce!

The Squid symbol and name is the Brand name only!

Where is this? In Thailand it does not have garlic only fish sauce and chili peppers as the usual
